Gambas 'Pil Pil' with sweet potato

Summer on a plate – delicious! These tasty spicy king prawns taste great with sweet potatoes and honey. Use the lemongrass as skewers for the prawns – it looks great and tastes even more delicious because the lemony taste penetrates the prawns.

Ingredients

  • 12 King prawns
  • 1 red chili pepper, de-seeded
  • 1 shallot
  • 4 tablespoons olive oil
  • 4 stalks lemongrass
  • 4 garlic cloves
  • Smoked paprika powder
  • 5 large sweet potatoes
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 limes

Directions

  • Clean and gut the prawns. Finely slice the garlic and red chili pepper and chop up the shallots. Mix the garlic, red chili pepper, onion, and olive oil with the paprika to form a marinade and leave the prawns to marinate for 2 hours.
  • Cut the sweet potato into slices and mix with the oil, chopped rosemary and honey. Bake the potatoes for 15 minutes at 180 degrees in the Airfryer. Meanwhile, thread the prawns on the stalks of lemongrass. Turn the temperature to 200 degrees and add the prawn skewers. Cook for 5 minutes. Serve with lime wedges.
